She now has arthritis in her hands, so as hergrandkids we bake these koekies over the holidays, while she sits and watches.Ingredients1kg Stork butter14 cups baking flour14 teaspoons baking powder1 tablespoon baking soda (mix in 1 cup of hot water before putting it into the mix)6 cups of sugar (white)2 tablespoons cinnamon powder1 tablespoon ginger powder1.5 teaspoons nutmeg powderA pinch of saltMethod1. Heat the oven to 180 degrees (C).2. Mix the butter and sugar in a bowl until it is creamy.3. Add all the dry ingredients in.4. Gently mix all the ingredients by hand.5. Slowly add a cup of boiled water and baking soda (bit by bit).6. Keep kneading the dough and add room temperature water into the mix until the dough is rollable.TIP: Place some flour on your table space when rolling it out so it does not stick to the surface.7. Roll the dough out until about 1cm thick (or the thickness you prefer) and use your cookiecutter to cut out your dough.8. Place the cookies on an oven proof baking sheet/pan (remember to spray the pan with anon-stick spray first).9. Keep an eye on them until they are golden brown. Take them out and place on arack or cloth to cool down before eating.11'
