b'Carrot Cake by Susan S | South AfricaWhy is it special?Carrot cake counts as a vegetable, doesnt it?IngredientsCake: Cream cheese frosting:500ml cake flour (all-purpose flour) 250g cream cheese250ml sugar 100g soft butter5ml baking powder 5ml vanilla extract5ml baking soda (bicarbonate of soda) 500ml icing sugarsifted5ml salt Crushed pecan nuts5ml cinnamon125ml pecan nuts250ml cooking oil4 eggs7501000ml grated carrots (250ml of carrotscan be replaced with 250ml smooth banana)MethodCake: Frosting:1. Preheat the oven to 180 degrees (C). 1. Mix the cream cheese and butter well.2. Mix all the dry ingredients and pecan nuts. 2. Add the vanilla extract.3. Add the oil and eggs to the dry ingredients and mix well. 3. Add the icing sugar and mix well, ensure 4. Add the carrots and mix well. If you want to add the that there are no lumps.banana, add it as well and mix well. 4. Spread the frosting in between the layers5. Prepare three x 20cm cake pans with butter. and on top of the cake once the cake 6. Divide the mixture equally between the three pans and cools down.bake it for25minutes until done. 5. Sprinkle the pecan nuts over the cake7. Remove from oven and let it cool down. as decoration.12'
